Thai Chicken Curry Slow Cooker Recipe

Such a beautiful combination of spices in this Thai chicken curry dish, it will certainly satisfy your taste buds! such a versatile dish you can use any type of protein you like, including chicken, beef or tofu, and add any vegetables you have on hand, making it a great meal for using up left overs. So easy to make with just a few simple steps this dish comes together quickly and easily, making it a great week night meal. Packed with protein and vegetables, also making it a nutritious and satisfying meal. Warm and cosy flavours of this dish make it a perfect comfort food for the chilly evenings that are approaching fast. 
Paleo, gluten free, dairy free.
  1. 3 carrots, medium
  2. 1 pinche chilli pepper flakes
  3. 1 bunch coriander
  4. 2 cloves garlic
  5. 1 inch ginger
  6. 1/4 cup shallots
  7. 1 x sweet potato, small
  8. 1 cups chicken stock
  9. 3 tbsp yellow curry paste
  10. 2 tablespoons turmeric
  11. 1 can coconut milk 
  12. 1kg chicken fillets or thighs

Mix altogether and add to slow cooker, cook for 6 hours. Serve with rice or noodles.
