Brown Rice & Quinoa Salad

If you are looking for a protein enriched textured salad this is the one for you. So many tasty nutritious items in it, keeps well, and you can add whatever you like.

Here is goes.

What you need:

  1. Brown rice & quinoa (this is the packet I used) one cup
  2. Two chopped tomatoes
  3. One finely chopped red onion
  4. Three shallots- chopped finely
  5. Handful of sultanas
  6. Half a cup of slivered almonds - or nut of choice
  7. One cup of cooked (just) pumpkin
  8. Parsley & Mint ( a handful of each )


  1. 1/4 cup olive oil
  2. 1/4 cup white vinegar
  3. 1-2 teaspoons chicken powder
  4. 1/4 cup sweet soy sauce
  5. Salt & pepper to taste

Variations- you can add kale or spinach, or even add some slightly cooked broccoli. This would have to be one of my most favourite recipes. Love the texture, not to mention even my husband likes it. Great for a large gathering as does make quite an amount.
