Ingredients

Carrots x 4 Large

1/2 cup Cilantro Or Italian parsley

1 Garlic Clove

1 tsp Ginger, Fresh

1 tbsp Lime or orange

1/3 cup Raisins

3 x Shallots
-
3 Tablespoons Lime Juice

2 Tablespoons Maple Syrup

¼ Cup Olive Oil

¼ Teaspoon Cayenne Pepper

½ Teaspoon Turmeric

½ Teaspoon Pepper
-
1 Teaspoon Curry Powder

½ Teaspoon Salt

½ Cup Cashews Toasted
Dressing

Nuts & Seeds
Directions
Place all ingredients in a bowl and toss well. Taste. Adjust to taste.
This will keep up to 4 days in the fridge.
Recipe Note
Use more carrots if needed, double recipe if needing a larger bowl. Delicous!
