Planning The Perfect Christmas Day Feast
Planning the perfect Christmas feast can be so enjoyable and oh so tiring! living in Queensland we certainly love the baked ham, prawns & chicken lunch! with absolutely delicious salads, baby potatoes, and a few vegetables but not the full hot lunch! we do start planning the menu and ordering a couple of months out, trying to source most items from all our local growers and farmers. The ham gets ordered quite early so we can tick that box, obviously the perishables cant get purchased until the day prior.
My Go To Baked Ham Recipe:
"Baked Ham With Sticky Glaze"
I always make the baked ham basting the night before, then early in the morning we baste.
Ingredients:
1/4 cup whole cloves
1 cup brown sugar
2 teaspoons dried mustard
1/4 cider vinegar
1/4 cup maple syrup
Method:
Mix altogether, leave overnight.
Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves.
Note: basting is dressing your meat, constantly as it is cooking, using a pasting brush.
Pre heat oven to 230% C for about 30 mins brushing often with the glaze, until the outside of the ham has turned a beautiful golden brown colour.
