Christmas Fruit Cake With Brandy Icing

What makes it so special, you ask? Well, it’s all in the secret ingredient - a tin of crushed pineapple! Yes, you heard right! This unique twist adds a burst of tropical freshness that will have you dreaming of a Christmas on the beach. 

But wait, there’s more! The brandy icing is the cherry on top of this festive treat. It’s rich, it’s tasty, and it’s guaranteed to spread some Christmas cheer.

Christmas Fruit Cake With Brandy Icing


  • 400 gram tin of crushed pineapple

  • 115 grams butter

  • 1 cup sugar

  • 450 grams sultanas or mixed fruit

Heat all together for about 15 mins, then add 1 tsp of baking soda.

Cool a little then add 2 beaten eggs

Fold in

  • 1 cup of flour
  • 1 cup of self raising flour
  • 1 teaspoon of cinnamon
  • 1 teaspoon of mixed spice

Use a 9 inch tin 150 degrees c for one hour and 15 mins. 

Brandy Icing

  • 170gms butter
  • 450 grams icing sugar
  • 3 tablespoons brandy
  • 2 teaspoons vanilla

Wizz together in the blender.
